BRUSCHETTA
Bruschetta is fresh, healthy, and easy. Here is but one example of a classic Italian recipe.
6-8 Roma Tomatoes
Fresh basil (to taste)
2 cloves minced garlic
1 tblsp EVOO
1 tsp Balsamic Vinegar
Salt and Pepper (to taste)
To prepare the tomatoes for peeling, first drop them in boiling water for one minute, and then shock them in ice water to cool for a moment. Peel the tomatoes, and then "squeeze" the excess juice from them. Chop them into half inch squares. Mince the fresh garlic and finely chop the basil to add to the tomatoes. Add the EVOO, Vinegar, Salt and Pepper and stir. Let sit for an hour while the flavors combine. Bruschetta is traditionally served with toasted crusty bread. Slice a loaf into half-inch pieces, rub with garlic and brush with olive oil. Toast until golden brown, and top with your freshly-made Bruschetta. Buon Appetito!
